Heart of House Specialist - Steward

About the role

The Heart of House Specialist supports key hotel functions, often working across departments such as the kitchen and food and beverage to meet cleaning needs. Duties include preparing clean linen and dining ware, operating and maintaining cleaning equipment like dishwashing machines and hand wash stations, and moving dishware around the hotel. The role is based in Cape Town.

Key responsibilities

• Follow personal hygiene procedures in the kitchen, including disinfecting hands, wearing a hat/hairnet and proper footwear, and report maintenance issues immediately.
• Assist with unpacking stocked kitchen trolleys.
• Clean dishwashing machines, including removing trash, cleaning spray arms and jets, and troubleshoot malfunctions; use chemicals in the 3-compartment sink at the right levels and document results.
• Rack, sort and stack clean items, spray racked items with hot water to remove food residue, and breakdown dirty bus tubs.
• Maintain sanitation and cleaning procedures and pest control guidelines, and report pest issues.
• Empty and reline trashcans, keep the dumpster area tidy, and wash and disinfect kitchen and linen store rooms, tools and equipment.
• Clean and mop assigned areas, organise cleaning supplies and chemicals separately from food, and keep hand wash stations fully stocked and functional.
• Store equipment safely, dispose of broken glass in the designated area, and follow hazardous material procedures and MSDS guidance.
• Report accidents and injuries to the manager, follow safety and security policies, use PPE and correct lifting techniques, and complete required safety training.
• Work flexibly with co-workers, using communication devices such as earpieces, two-way radios and DECT phones.

Required profile

• 6 months to 1 year of experience as a cleaner or steward in a similar hospitality environment.
• Able to work without supervision, customer and staff focused, and team oriented.
• Able to work flexible hours and shifts.
