About the role

The Director of Food & Beverage leads the overall food and beverage strategy for the V&A Waterfront portfolio, overseeing restaurants, bars, function venues and in‑room dining across multiple hotels. This senior position combines commercial acumen with guest‑experience curation to make F&B a key profit driver while enhancing the brand and guest journey.

Key responsibilities

• Define and execute a comprehensive food and beverage strategy for all outlets within the V&A Waterfront portfolio (V&A Hotel, Queen Victoria Hotel, Dock House, Manor House).
• Drive financial performance, ensuring revenue growth and cost control across all F&B operations.
• Lead concept development and innovation to keep the offering fresh and competitive.
• Maintain operational excellence and high standards of service quality.
• Build, mentor and manage high‑performing, multi‑disciplinary teams.

• Proven senior leadership experience in food and beverage operations within a hotel or resort environment.
