Cluster Food & Beverage Director – Luxury Hotel Portfolio

About the role

The Cluster Food & Beverage Director will lead the F&B strategy for a prestigious luxury hotel portfolio at the V&A Waterfront in Cape Town. Reporting to senior leadership, you will be responsible for turning food and beverage operations into a key profit driver while enhancing the guest experience across multiple outlets and properties.

Key responsibilities

• Define and execute a cohesive F&B strategy aligned with brand positioning and business objectives across all properties.
• Drive total F&B revenue, profitability, market share and implement pricing, revenue optimisation and cost‑control frameworks.
• Identify and launch new concepts, partnerships and business opportunities.
• Oversee capital planning, investment decisions and ensure strong ROI on F&B projects.
• Provide executive oversight of restaurants, bars, functions and in‑room dining, maintaining consistent standards and SOPs.
• Conduct operational audits, drive continuous improvement and ensure compliance with health, safety and statutory regulations.
• Optimise labour structures, productivity and supplier relationships.
• Lead, inspire and develop multi‑disciplinary F&B teams, fostering a culture of accountability and service excellence.

Required profile

• Bachelor’s degree in Hospitality Management, Business Administration or a related field (preferred).
• 8‑10+ years of senior F&B leadership experience in luxury or multi‑property environments.
• Proven track record of revenue growth, profitability and operational excellence at a portfolio level.
• Strong commercial and financial acumen with advanced analytical capability.
• Experience in concept development, brand positioning and large‑scale operations.
• Excellent stakeholder management and ability to collaborate with Executive Chef, Sales and Rooms Division teams.
