Pastry Commis Chef

About the role

Fairmont Hotels & Resorts, part of Accor, is hiring a Pastry Commis Chef in Cape Town. The Commis Chef focuses on mastering the skills and tasks assigned by supervisors, acts professionally according to the company's mission, vision and values, and strives to exceed guest expectations and help the culinary team improve.

Key responsibilities

• Attend daily shift briefings, communicate daily with supervisors and share ideas and suggestions
• Present in a full chef's uniform, following hygiene and grooming requirements, and support and motivate kitchen colleagues
• Promote health and safety, keep knives and tools clean, follow the Food Safety Programme and keep the kitchen clean with a clean-as-you-go approach
• Help clear, clean and wash the kitchen using approved products and methods
• Maintain chiller stock with FIFO rotation, keep storeroom requisitions accurate and label stock correctly
• Undergo formal and on-the-job training, complete assigned training on Ines and seek self-development tools
• Minimise wastage and spoilage, record it on the Winnow system and help with stock taking with the Head Chef
• Cook food to a high standard at safe temperatures, check mise en place daily and act as an extension of the kitchen managers to ensure food consistency and quality
• Follow up tasks according to business volume and perform other reasonable duties asked by the department head

Required profile

• Strong passion for food
• 1 year of experience in a food production environment
• Food hygiene and safety training
• Enthusiastic, positive attitude and driven to succeed
