Commis Chef – Full-time position in Cape Town

About the role

The Commis Chef role at AccorHotel’s Fairmont property in Cape Town is an entry‑level kitchen position focused on developing culinary skills under the guidance of senior chefs. You will work in a fast‑paced environment, supporting the team to deliver high‑quality dishes and exceptional guest experiences.

Key responsibilities

• Attend daily shift briefings and maintain clear communication with supervisors.
• Follow all personal hygiene, grooming, and uniform standards.
• Maintain cleanliness of workstations, knives, tools, and overall kitchen areas.
• Ensure food safety and hygiene practices in line with the Food Safety Programme.
• Manage stock rotation using FIFO, label items correctly, and assist with stock taking.
• Support waste reduction by recording spoilage on the Winnow system.
• Prepare mise en place, perform cooking tasks, and ensure food is served at safe temperatures.
• Assist with deep cleaning, equipment maintenance, and overall kitchen organization.

Required profile

• Passion for food with at least 1 year experience in a food production environment.
• Food Hygiene and Safety training.
• Strong communication skills and a positive, enthusiastic attitude.
• Ability to work flexible hours, including early mornings, weekends, and holidays.
• Proficiency in English (written and verbal); additional language is a plus.
• Reliability, ability to work under pressure, and teamwork orientation.
