Chef de Partie - Mama Shelter Cape Town

About the role

Mama Shelter, a brand of Ennismore (a joint venture with Accor), is hiring a full-time Chef de Partie in Cape Town. You will own your section of the kitchen, keep standards high and make sure every plate leaves the kitchen as it should. The company states that no diploma or years of experience are required.

Key responsibilities

• Take responsibility for your assigned section and keep day-to-day operations running smoothly
• Prepare and cook dishes consistently to Mama's recipes, presentation and quality standards, with strong mise en place
• Work efficiently during busy service, delivering dishes on time and communicating clearly with the Sous Chef, Chef de Cuisine and the wider kitchen team
• Follow recipes, portion controls and presentation standards, and handle and store food correctly
• Maintain a clean, organised and safe workstation, following HACCP, food safety, hygiene and health and safety procedures
• Monitor ingredients and stock levels, minimise waste and report shortages, quality issues or wastage
• Support colleagues, help train and guide Commis Chefs and junior team members

Required profile

• Previous experience as a Chef de Partie or in a similar kitchen role
• Strong knowledge of your section and solid culinary fundamentals
• Organised, disciplined and able to stay calm under pressure
• Experience in a lifestyle, luxury, casual dining or design-led hotel/restaurant; pre-opening experience is a big plus
• Experience across different cuisines or high-volume operations is a plus
• Valid work authorisation for South Africa; visa sponsorship is not available
