Sous Chef – Full-time, pre-opening role

About the role

The Sous Chef will join T&A Cuisine’s founding kitchen team in Durban, working full‑time on‑site ahead of the restaurant’s December 2026 opening. Reporting to the Head Chef, the role supports daily kitchen operations across breakfast, café and à la carte service.

Key responsibilities

• Supervise kitchen staff and coordinate service during peak periods.
• Manage stock, ordering, inventory and portion control.
• Uphold halal food‑handling, food safety, hygiene and cleanliness standards.
• Contribute to menu design, refinement and ensure consistent quality and presentation.
• Provide staff training, foster a collaborative kitchen culture and step in as kitchen leader when the Head Chef is absent.
• Assist with cost control, waste management and overall kitchen efficiency.

Required profile

• Proven proficiency in professional cooking techniques and menu development.
• Strong kitchen operations experience, including staff supervision and shift coordination.
• Solid understanding of food safety regulations and halal kitchen practices.
• Experience in inventory management, portion control and basic cost management.
• Effective communication and teamwork skills, with prior supervisory or senior line‑cook experience.
• Relevant culinary qualification or equivalent practical experience; flexibility to work varied shifts.
