R&D Product Development Technologist – Meat & Protein Processing

About the role

The R&D Product Development Technologist will lead the creation of new meat and protein products for a fast‑moving consumer goods manufacturer. Working within the Research & Development team, you will manage the full product lifecycle from concept through pilot trials to commercial launch, ensuring alignment with customer needs and commercial targets.

Key responsibilities

• Develop innovative meat and protein product concepts based on market trends and customer briefs.
• Manage multiple New Product Development projects through the Stage‑Gate process, coordinating pilot plant, innovation centre and factory trials.
• Conduct sensory evaluations, benchmarking and performance testing, and provide regular updates to the Head of R&D.
• Create and maintain Bills of Materials, calculate recipe costings, and ensure target gross profit margins are achieved.
• Prepare technical documentation, cost sheets and regulatory submissions for customer approvals.
• Collaborate with Food Safety and Regulatory teams to manage allergen declarations, HACCP compliance and shelf‑life validation.

Required profile

• Proven experience in meat and protein processing within a food manufacturing or FMCG environment.
• Strong commercial awareness with the ability to develop cost‑effective formulations.
• Excellent project management skills and the ability to work cross‑functionally under tight deadlines.

Required skills

• Proficiency with ERP systems for recipe costing and BOM management.
• Advanced Excel skills for cost modelling.
• Knowledge of HACCP principles and food safety regulatory requirements.
