Junior HACCP Clerk

About the role

Our client, a leading food manufacturing and FMCG company in Kommetjie, Cape Town, is looking for a Junior HACCP Clerk to join the Quality Assurance team on a permanent basis. You will support food safety documentation, monitor critical control points, and assist with internal and external audits.

Key responsibilities

• Maintain HACCP, SOPs, and food safety records in line with regulatory standards.
• Monitor Critical Control Points (CCPs) and ensure compliance with GMP and hygiene requirements.
• Verify Certificates of Analysis, product specifications, and batch documentation.
• Conduct routine checks such as temperature, pH, Brix, and shelf‑life testing.
• Support environmental monitoring, swab sampling, and microbial testing programmes.
• Maintain calibration records for pH meters, refractometers, scales and thermometers.
• Prepare documentation for internal, external, customer and certification audits.
• Assist with mock recalls, traceability exercises and non‑conformance investigations.

Required profile

• National Diploma or Degree in Food Technology, Food Science, Consumer Science, Food & Nutrition, Biotechnology or related field.
• 2‑3 years experience in food manufacturing, FMCG or quality assurance.
• Strong knowledge of HACCP, GMP, food safety legislation and document control.
• Experience with microbiological testing, environmental monitoring and audit preparation.
