Commis Chef – Protea Hotel Fire & Ice

About the role

The Commis Chef will support the kitchen team at Protea Hotel Fire & Ice by preparing ingredients, cooking and assembling dishes, and maintaining a clean and safe work environment. This full‑time position involves working with a variety of kitchen equipment to deliver high‑quality food that meets the hotel’s standards.

Key responsibilities

• Prepare, portion, chop, wash, peel and store fresh fruits, vegetables and other ingredients.
• Weigh, measure and mix ingredients according to recipes and food preparation checklists.
• Cook and assemble hot and cold dishes, ensuring quality, presentation and temperature standards.
• Operate ovens, stoves, grills, microwaves, fryers and other kitchen equipment safely.
• Test foods for doneness, monitor food quality throughout preparation, and adjust as needed.
• Set up and break down work stations, serve food in proper portions, and maintain clean work areas.
• Wash, disinfect and sanitize kitchen tools, knives, equipment and surfaces.
• Check and record appliance and food temperatures to ensure compliance with safety standards.
• Report maintenance needs, accidents, injuries or unsafe conditions to the manager.
• Follow all company safety, security and hygiene policies, including use of personal protective equipment.

Required profile

• Ability to stand, walk or sit for extended periods and perform physical tasks such as bending, twisting, lifting and carrying up to 25 lb.
• Commitment to follow safety and security procedures and complete required training.
• Professional appearance and adherence to uniform and hygiene standards.
• Willingness to work collaboratively with the kitchen team and support common goals.
