Senior Chef de Partie – Multiple Kitchens

About the role

Fancourt, South Africa's premier golfing and leisure destination, is seeking a Senior Chef de Partie to lead a kitchen section across its estate. The role is ideal for a culinary professional who thrives in a fast‑paced, high‑performance environment and is committed to delivering 5‑star dining experiences.

Key responsibilities

• Lead and manage an allocated kitchen section, ensuring smooth service and adherence to 5‑star standards.
• Prepare, cook, and present dishes while accommodating guest preferences and dietary requirements.
• Support the Sous Chef with menu planning, recipe development, and new menu implementation.
• Assist in planning and executing special events, seasonal menus, and functions.
• Maintain consistency in food quality, presentation, portion control, and service standards.
• Manage stock levels, rotation, costing, and ordering to minimise waste and meet cost targets.
• Supervise, coach, and train junior kitchen staff, allocating duties and monitoring performance.
• Act as the Sous Chef’s delegate during absences, ensuring continuity of operations.

Required profile

• Minimum Grade 12 qualification or equivalent.
• At least six months of formal chef training.
• Minimum three years of experience as a Senior Chef de Partie or Chef de Partie in a recognised 4‑ or 5‑star hotel, resort or fine‑dining establishment.
• Strong attention to detail, ability to work under pressure, and excellent interpersonal and communication skills.

Required skills

• Computer literacy in MS Office.
• Familiarity with SAP (advantageous).
