General Manager – Upmarket Restaurant (Rosebank)

About the role

We are seeking an experienced, hands‑on General Manager to lead a well‑established upmarket restaurant in Rosebank, Johannesburg. You will own the day‑to‑day operations, ensuring exceptional guest experiences while driving profitability and operational efficiency.

Key responsibilities

• Oversee all restaurant functions – front‑of‑house, bar, and coordination with kitchen management.
• Lead, train, mentor and motivate waitstaff, hosts, bartenders and supervisors.
• Manage rosters, recruitment, onboarding and performance reviews.
• Drive revenue, control costs, manage budgets, stock levels and supplier relationships.
• Monitor health, safety and hygiene standards and ensure compliance with liquor licensing and POPIA.
• Handle guest relations, resolve complaints and nurture regular patron relationships.
• Maintain premium brand standards, ambience and reputation, including wine cellar programme and private dining events.
• Report sales, labour costs and operational KPIs to senior ownership.

Required profile

• South African citizen with a valid ID.
• Minimum 5 years in a General Manager or senior Restaurant Manager role, preferably fine‑dining or premium steakhouse.
• Proven track record of managing high‑volume, high‑standard restaurant operations.
• Strong financial acumen – budgeting, stock control and P&L management.
• Excellent leadership, interpersonal and conflict‑resolution skills.
• Flexibility to work evenings, weekends and public holidays.
• Own transport and a valid driver’s licence (advantageous).
