Spanish-Speaking Garde Manger – Cruise Ship Galley

About the role

Portside Consulting is recruiting a Garde Manger for an international cruise line, working in a Spanish-speaking team in the galley under the Chef de Partie. The post involves running cold kitchen production on contracts of several months at sea.

Key responsibilities

• Prepare salads, dressings and cold sauces, cold cuts, charcuterie and cheese platters, canapés, appetisers and buffet display platters to recipe, portion and presentation standards for high-volume service in main dining rooms, buffets and events.
• Follow strict public health and food safety standards (USPH/HACCP), with particular care for cold-chain temperatures, labelling and allergen control.
• Keep the section clean and organised and assist with stock rotation.
• Work long shifts in a multicultural galley team.

Required profile

• Fluent spoken Spanish; good spoken and written English.
• Minimum 3 years' garde manger / cold kitchen experience in a professional hotel, resort or cruise ship kitchen.
• Grade 12 or equivalent completed secondary education.
• Valid passport.
• Preferred: international kitchen experience, a culinary qualification, 4- or 5-star hotel, banquet or buffet experience, and cruise ship experience.
