Sous Chef – Fine Dining Kitchen, Luxury Estate, Stellenbosch

About the role

Join a world‑class fine‑dining kitchen on a prestigious luxury estate in Stellenbosch. Working closely with the Head Chef, you will help deliver exceptional culinary experiences in a refined, high‑end environment.

Key responsibilities

• Lead the kitchen team and assume full responsibility in the Head Chef’s absence.
• Mentor junior chefs on food preparation, cooking techniques and plating.
• Oversee daily kitchen operations to ensure consistency and excellence in every dish.
• Manage stock, ingredients and maintain a strict FIFO system.
• Monitor food quality, freshness, presentation and correct temperatures at all times.
• Ensure all stations are well‑stocked and prepared for service.
• Assist with menu planning and development alongside the Head Chef.
• Train, assess and develop kitchen staff on an ongoing basis.
• Control food ordering, stock levels and minimise waste to meet budget targets.
• Maintain kitchen organisation, hygiene and food‑safety standards.
• Oversee staff scheduling, rosters and daily operational planning.
• Brief the team on reservations, events and specific menu requirements.

Required profile

• Culinary Diploma or equivalent qualification.
• Approximately 4 years experience in a senior chef role within a 4‑ or 5‑star or fine‑dining environment.
• Strong leadership and team‑management abilities.
• Passion for high‑quality, detail‑focused cuisine.
• Excellent organisational and time‑management skills.
• Effective written and verbal communication.
• Own transport with a valid driver’s licence.
• Flexibility to work evenings, weekends and public holidays.
