Hotel Restaurant Guest Services Manager

About the role

A Stellenbosch winelands farm, one of South Africa's oldest working farms, is looking for an experienced Hotel Restaurant Guest Services Manager to lead its Food & Beverage guest service operations. The role covers room service, meeting rooms and pool outlets, villas, restaurants, bars and other guest service areas, aiming for superior guest service, quality and hygiene compliance and profitable performance.

Key responsibilities

• Lead the hotel guest service teams and maintain operational standards while seeking innovation
• Keep at least one manager present in the restaurant guest service area at all times
• Oversee daily operations, monitor annual operating costs and control systems, and update operating systems with correct pricing and items
• Manage daily, weekly and monthly stock control, including bar beverage stock takes and monthly beverage stock counts, and report variances
• Minimise breakages, manage OE usage and track stock against management reports
• Oversee shift cash-ups, ensure no outstanding checks or open tables remain before staff leave, and close out them promptly
• Maximise revenue and cost control in line with budget, and support approved concepts and group functions
• Run on-the-job training, apply consistent performance management and disciplinary practice, and resolve issues fairly
• Manage the electronic time book, coordinate the timesheet process and submit weekly and monthly payroll plans on time

Required profile

• At least 5 years' experience in Food & Beverage operations in a supervisory role, with at least 2 years at management level or in a similar role
• Degree or diploma in Hospitality Management advantageous
• WSET/CWA certification desirable; knowledge of wines and wine terminology desirable
• Sound understanding of F&B terminology, restaurant administration and financials, and practical experience in service recovery
• Strong financial acumen and interpersonal and communication skills
• South African citizen or permanent resident; candidates living outside the Winelands region must attend personal interviews and cook-offs at their own expense
