Pastry Cook - International Cruise Ship Galley

About the role

Portside Consulting recruits for international cruise lines and is looking for a Pastry Cook to work in the pastry section of an international cruise ship galley. You will work with the Pastry Chef and the pastry team to deliver high-volume service in main dining rooms, buffets and crew dining.

Key responsibilities

• Prepare desserts, pastries, breads, cakes and baked goods to recipe, portion and presentation standards.
• Handle mise en place, baking and finishing.
• Keep the pastry section, equipment and storage clean and organised in line with strict public health and food safety standards (USPH/HACCP), including allergen control.
• Assist with stock rotation.
• Work long shifts in a multicultural galley team on contracts of several months at sea.

Required profile

• Minimum 3 years' pastry or bakery experience in a professional hotel, resort or cruise ship kitchen.
• Grade 12 (Matric) or equivalent.
• Valid passport.
• Good spoken and written English.

Required skills

• Practical skill in doughs, pastries, cakes and desserts.
• Working knowledge of food safety, hygiene and allergen practices.
• Preferrable: international kitchen experience, pastry or culinary qualification, high-volume or banquet/buffet experience, and cruise ship experience.
