Commis Chef

About the role

The Commis Chef will support the culinary team in a Fairmont hotel kitchen, focusing on mastering basic cooking techniques and maintaining high standards of food quality, safety and service.

Key responsibilities

• Attend daily shift briefings and communicate with supervisors to stay informed of operational needs.
• Maintain personal hygiene, keep knives and tools clean, and follow the Food Safety Programme.
• Assist in food preparation, mise en place and ensure dishes are served at safe temperatures.
• Keep the kitchen clean and tidy, adopting a "clean as you go" approach.
• Manage stock rotation using FIFO, label items correctly and support stock taking.
• Record and minimize waste using the Winnow system.
• Promote health and safety practices and support colleagues in a disciplined work environment.

Required profile

• Strong passion for food with at least 1 year of experience in a food production environment.
• Food Hygiene and Safety training.
• Excellent communication skills and an enthusiastic, positive attitude.
• Reliability, ability to work flexible hours including early mornings, weekends and holidays.
• Capability to work under pressure in a fast‑paced kitchen and collaborate effectively with team members.

Required skills
