Restaurant Manager (Drakensberg)

About the role

We are looking for a dynamic Restaurant Manager to lead the dining operation at our destination hospitality venue in Durban. The role is hands‑on, requiring a confident professional who can deliver exceptional guest experiences while driving operational efficiency and financial performance.

Key responsibilities

• Oversee front‑of‑house service, ensuring personalised guest interactions and high standards of presentation.
• Recruit, train, coach and mentor the restaurant team, conducting daily briefings and performance reviews.
• Manage service flow, reservations, seating and coordination between kitchen, bar and service staff.
• Control budgets, monitor daily revenue, stock and wastage, and drive upselling of food and beverage.
• Support group bookings, functions and special events, working closely with other departments to ensure seamless experiences.

Required profile

• Minimum 5 years’ experience in restaurant management, preferably in a hotel, lodge, resort or fine‑dining environment.
• Strong leadership presence with a detail‑driven, hands‑on approach.
• Excellent knowledge of restaurant service, food, beverage and wine.
• Proven track record of team leadership, operational excellence and commercial results.
• Ability to work flexible hospitality hours, including weekends, public holidays and peak periods.
