Restaurant General Manager

About the role

A private employer is looking for an experienced and highly motivated Restaurant General Manager to take full responsibility for the day-to-day operation of a busy, high-end restaurant in Morningside, Durban. The successful candidate oversees the entire operation, from kitchen to support departments, and leads department managers and supervisors.

Key responsibilities

• Oversee the kitchen, front of house, bar, cashiers, waiters, stores, cleaning, maintenance and all support departments, defining roles, reporting lines and checks and balances.
• Implement and maintain operational systems, standard operating procedures, staff policies and daily processes, allocate duties, monitor performance and run regular management meetings.
• Manage stock ordering, supplier relationships, stock levels, daily, weekly and monthly stock takes, food and beverage cost control, wastage and loss prevention.
• Monitor sales performance, labour costs, operating expenses and gross profit, and identify ways to improve efficiency and increase revenue.
• Recruit, train, mentor and develop staff, manage performance, handle disciplinary matters and ensure consistent customer service.
• Maintain compliance with food safety, health, hygiene and licensing requirements.

Required profile

• Experience managing a restaurant and leading department managers and supervisors.
• Strong understanding of stock control and cost management.
• Understanding of restaurant financial management.
• Organised, disciplined, proactive and strategic, yet hands-on in daily operations.
• Strong leadership, communication and decision-making skills; able to build systems that keep the restaurant efficient, consistent and profitable.
