Production Manager

About the role

Botha Kelder, a historic winery in the Breedekloof wine region, is seeking an energetic Production Manager to lead its winemaking and production operations. Reporting directly to the CEO, the successful candidate will be responsible for delivering quality wines while managing people, budgets, and compliance.

Key responsibilities

• Lead and oversee all winemaking and production operations.
• Develop and implement winemaking strategies to meet quality, style, and production targets.
• Manage personnel – planning labour, appointments, training, performance, and discipline.
• Ensure compliance with food safety, health and safety, environmental, and regulatory standards.
• Develop and monitor production budgets and control costs.
• Coordinate maintenance and optimal use of cellar equipment and infrastructure.
• Oversee cellar administration and stock control of bulk wine, dry goods, additives, and consumables.
• Liaise with bulk wine clients on proposals, negotiations, and contracts.

Required profile

• Relevant tertiary qualification (degree or diploma) in Viticulture & Oenology.
• Minimum 10 years of winemaking experience.
• Leadership or senior‑level experience is advantageous.
• Proven track record producing quality bulk wines across various styles.
• Strong knowledge of food safety, occupational health & safety, environmental and industry regulations.
• Experience in personnel management, production planning, budgeting, inventory management and cost control.
• Excellent planning, organisational, interpersonal and communication skills.
• Fully bilingual in Afrikaans and English.
• Valid driver’s licence and willingness to live on company premises.
