Lab and Food Safety Assistant – Durban

About the role

One of our clients, a leader in the manufacturing industry, is seeking an experienced Lab and Food Safety Assistant in Durban. The role involves laboratory testing, supporting food safety and quality assurance systems, and ensuring compliance with HACCP and related standards.

Key responsibilities

• Conduct routine analysis of wheat, flour, premixes and finished products.
• Perform laboratory testing including HLM, falling number, protein, moisture, screenings, mixograph, farinograph, extensograph, alveograph, gluten, ash, starch damage, colour, sieve and starch analyses.
• Operate laboratory equipment such as the CD1 Mill and accurately record and report results.
• Support implementation and continuous improvement of Food Safety and Quality Management Systems.
• Ensure compliance with HACCP, FSSC 22000, ISO 22000 and company food‑safety standards.
• Assist with internal, external and customer audits, maintaining documentation and corrective actions.
• Support new product development, product trials and competitor analysis.
• Investigate customer complaints, implement corrective actions and liaise with customers on quality matters.

Required profile

• Grade 12 (Matric) and a National Diploma or equivalent in Food Technology, Biotechnology, Microbiology, Food Science or a related discipline.
• Working knowledge of HACCP, GMP and GLP.
• Proficient computer skills, especially Microsoft Word, Excel and Outlook.
• Strong attention to detail and ability to identify non‑conformances.

Required skills

• Laboratory testing methods (HLM, falling number, protein, moisture, mixograph, farinograph, extensograph, alveograph, gluten, ash, starch damage, colour, sieve).
• Operation of CD1 Mill and related lab equipment.
• Data recording, analysis and reporting using Microsoft Excel.
• Knowledge of food safety standards: HACCP, FSSC 22000, ISO 22000.
• Audit preparation and documentation management.
