Hotel Procurement Manager – Strategic Sourcing Lead

About the role

We are seeking an experienced, commercially‑astute Head of Procurement to lead the end‑to‑end procurement function for our 349‑room hotel. Reporting to the Director of Finance, the role oversees procurement and cost‑control while partnering with senior leaders across all departments.

Key responsibilities

• Develop and implement the hotel’s procurement strategy, policies, procedures and annual sourcing plan.
• Lead strategic sourcing initiatives, RFQs, formal tenders and commercial evaluations across categories such as Food & Beverage, operational supplies, technology and capital projects.
• Negotiate supplier pricing, payment terms, service levels, warranties and other commercial conditions.
• Manage supplier contracts throughout their lifecycle, maintain a comprehensive contract register and oversee due‑diligence, onboarding and master‑data requirements.
• Monitor supplier performance using scorecards and conduct regular reviews covering price, quality, delivery, compliance and risk.
• Collaborate with Cost Control, Stores and operational teams to optimise inventory, reduce waste and improve stock turnover.
• Identify, measure and validate procurement savings, cost avoidance and other value improvements, and produce dashboards and reports for senior leadership.

Required profile

• Bachelor’s degree in Procurement, Supply Chain Management, Business Administration or related field; recognised procurement qualification (e.g., CIPS) preferred.
• Minimum 7 years progressive procurement or supply‑management experience, with at least 3 years leading a procurement team.
• Direct hotel or hospitality procurement experience strongly preferred, including experience across multiple spend categories.
• Strong financial and commercial acumen with proven ability to analyse spend, demand and market trends.
• South African work authorisation.
