Commis (Kitchen Assistant) – Cape Town

About the role

The Commis 1 supports the Executive Chef at One&Only Cape Town, ensuring high‑quality food preparation, presentation and service in a luxury resort kitchen. Working on‑site, the role contributes to delivering memorable guest experiences through meticulous attention to detail and adherence to food safety standards.

Key responsibilities

• Prepare and organise mise en place accurately and on schedule for assigned kitchen sections.
• Maintain cleanliness and sanitation of work areas, equipment and storage in line with resort and South African food safety regulations.
• Assist the Chef de Cuisine in food production, ensuring consistent quality and presentation.
• Label and store products correctly, monitor stock levels and report any issues.
• Engage professionally with guests, handle complaints according to service recovery procedures and relay feedback to management.
• Participate in daily briefings, mandatory training and departmental meetings.
• Uphold personal grooming standards, workplace safety and compliance with resort policies.

Required profile

• Strong teamwork and communication skills.
• Ability to follow standard operating procedures and maintain high hygiene standards.
• Flexibility to work varied shifts, including weekends and holidays.

Required skills

• Knowledge of food safety, hygiene and sanitation practices.
• Basic knife skills and ability to execute mise en place.
• Familiarity with kitchen equipment operation and maintenance.
