Chef de Partie – Multiple Kitchen Sections

About the role

Fancourt, South Africa’s premier golfing and leisure destination, is seeking a motivated Chef de Partie to work across several of its estate kitchens. The successful candidate will deliver 5‑star food quality while supporting a fast‑paced service environment.

Key responsibilities

• Prepare, cook and present dishes to 5‑star standards, respecting guest preferences and dietary needs.
• Manage an allocated kitchen section during service, ensuring all mise en place is ready.
• Supervise, guide and train junior kitchen staff within the section.
• Maintain high standards of food quality, presentation, portion control and hygiene.
• Assist with stock management, rotation, basic costing and equipment maintenance.
• Ensure compliance with HACCP, food safety, waste management and pest control procedures.
• Collaborate with the Sous Chef and other sections to achieve efficient service delivery.

Required profile

• Minimum Grade 12 (or equivalent) qualification.
• Six months of formal chef training.
• At least three years’ experience as a Demi Chef de Partie in a recognised 4‑ or 5‑star hotel, resort or fine‑dining establishment.
• Physically and mentally fit for a high‑pressure kitchen environment.
• Own accommodation in George or surrounding area and availability to work weekends, public holidays and shifts.

Required skills

• Computer literacy in MS Office.
• Familiarity with SAP.
