Assistant Outlet Manager

About the role

The Assistant Outlet Manager supports the smooth operation of all food and beverage outlets at One&Only Cape Town, ensuring that sales targets and profit margins are met while maintaining the brand’s high standards of service and guest experience.

Key responsibilities

• Monitor and adjust selling prices across the F&B department and conduct bi‑monthly stock takes.
• Prepare and distribute service charge allocations in line with company policy.
• Update monthly forecasts (PIM) to maximise profitability and assist with costing and cost‑control analysis.
• Conduct quarterly market pricing research and provide recommendations.
• Oversee recruitment, development, appraisal and performance management of F&B staff.
• Handle HR functions including disciplinary hearings, grievance resolution and compliance with labour relations policies.
• Identify and implement improvements to standard operating procedures.

Required profile

• Strong understanding of food and beverage operations and financial controls.
• Experience in staff management, training and performance evaluation.
• Ability to analyse data, forecast sales and implement cost‑saving measures.
• Excellent communication skills and a proactive approach to problem‑solving.
