Sommelier – Luxury Hotel Wine Service

About the role

As a Sommelier at Accor’s Fairmont hotel in Cape Town, you will deliver a complete wine experience to guests, from personalized recommendations to managing the wine dispensary. You will ensure tight stock control, maximize revenue, and create memorable moments through expert food‑and‑wine pairings.

Key responsibilities

• Control the hotel’s wine dispensary, maintain accurate stock levels and maximize revenue.
• Assist guests with wine and beverage pairings that complement the menu.
• Supervise mise‑en‑place, service of beverages and ensure adherence to brand standards.
• Manage wine list updates, liaise with suppliers, and conduct staff training on wine knowledge.
• Handle receipt issuance, stock control, and financial procedures related to beverage sales.

Required profile

• Previous experience as a Sommelier, Wine Steward or similar role.
• Extensive knowledge of Southern African wines and vineyards.
• Certificate from Cape Wine Academy or WSET Level 2 (or equivalent).
• Excellent reading, writing and oral proficiency in English.
• Professional presentation, strong leadership and organizational abilities.

• In‑depth wine knowledge and food‑wine pairing expertise.
