Restaurant Operations Manager

About the role

We are representing a high‑end, established restaurant in Sandton that is seeking a top‑tier General Manager / Operations Lead to take full ownership of the business from May 2026. The role is ideal for a systems‑driven operator with a proven ability to build, implement and enforce world‑class operational structures within a premium hospitality environment. Candidates must reside in the Johannesburg area or be willing to relocate.

Key responsibilities

• Full strategic and operational control of the restaurant.
• Design and implement robust SOPs, policies, and operational frameworks across front‑of‑house and back‑of‑house.
• Drive consistency, efficiency and accountability through structured systems.
• Lead and develop a high‑performance team aligned to clear operational standards.
• Own financial performance, cost control and margin optimisation.
• Establish strong administrative, reporting and stock control systems.
• Uphold and elevate a premium guest experience through disciplined execution.

Required profile

• 6+ years senior management experience in up‑market or fine‑dining hospitality.
• Demonstrated success creating and implementing operational systems, policies and procedures.
• Strong commercial understanding of restaurant financials, cost control and performance management.
• Proven leadership of both front‑of‑house and back‑of‑house teams at a senior level.
• Highly structured, detail‑oriented and process‑driven mindset.
• Strong leadership presence with ability to enforce standards and drive accountability.
• Stable career history with verifiable, contactable references (essential).
