Restaurant Manager – Luxury Safari Lodge

About the role

The Luxury Safari Lodge in Pongola, KwaZulu‑Natal is seeking an experienced Restaurant Manager to lead its dining operations. This full‑time position will oversee breakfast, lunch, dinner and special events, ensuring a five‑star guest experience in a world‑class safari setting.

Key responsibilities

• Direct daily restaurant activities, including service, kitchen coordination and event catering.
• Maintain high standards of food safety, hygiene and HACCP compliance.
• Control inventory, stock levels and beverage management to optimise cost efficiency.
• Handle guest feedback and complaints professionally, turning issues into positive outcomes.
• Prepare reports on sales, labour costs and operational performance.
• Recruit, train, motivate and develop front‑of‑house staff.

Required profile

• Proven experience as a Restaurant Manager in a luxury lodge, hotel or fine‑dining environment.
• Strong leadership and people‑management abilities.
• Excellent communication and guest‑service skills.
• Flexibility to work weekends, public holidays and rotating shifts.
• Professional, detail‑oriented approach with a hands‑on attitude.
