Executive Chef – Lead Kitchen Operations

About the role

Premier Hotels & Resorts is looking for an experienced Executive Chef to lead its kitchen operations across restaurants, in‑room dining and event venues in Cape Town. The successful candidate will combine culinary creativity with strong leadership to deliver memorable dining experiences for guests.

Key responsibilities

• Oversee daily kitchen activities, ensuring high‑quality food preparation and presentation.
• Design and innovate menus for restaurants, conferences, weddings and banquets.
• Manage food costs, budgets, stock control and supplier relationships.
• Lead, train and motivate the kitchen brigade to maintain service excellence.
• Ensure compliance with HACCP, hygiene, health and safety standards.
• Collaborate with Food & Beverage and Events teams to enhance guest satisfaction.
• Monitor guest feedback and adjust offerings accordingly.

Required profile

• Recognised culinary qualification.
• Minimum 5 years as Executive Chef or Senior Sous Chef in a 4‑ or 5‑star hotel.
• Strong knowledge of international food trends and menu engineering.
• Proven ability to manage and motivate diverse teams.
• Excellent organisational and leadership skills.
