Commis Chef – Kitchen Assistant

About the role

The Commis Chef supports the Demi Chef de Partie in preparing, cooking, and storing food across all kitchen sections, including pastry, cold, and hot stations. The role requires strict adherence to HACCP and food safety standards while delivering exceptional service to guests.

Key responsibilities

• Prepare and maintain mise‑en‑place, ensuring freshness and timely delivery.
• Cook food according to approved menus and quality standards.
• Maintain clean and hygienic workstations, complying with health and safety regulations.
• Assist the Demi Chef de Partie with health, hygiene, and HACCP documentation.
• Monitor inventory, request supplies, and record stock movements.
• Report equipment issues, maintenance needs, and any operational problems.
• Ensure minimal waste and proper handling of kitchen smalls and equipment.

Required profile

• Matric or equivalent (NQF 4).
• Food and wine knowledge with a proven record in kitchen management (cold, hot, or pastry).
• Basic computer literacy, especially MS Office.
• Good cooking skills, knowledge of ingredients, equipment, and processes.
• Strong time‑management, flexibility, and a professional appearance.
