Commis Chef (Hotel Kitchen)

About the role

NH Hotels & Resorts, a globally recognised hospitality brand, is looking for a Commis Chef to join its kitchen team at the Sandton property in Johannesburg. The role supports food preparation, cooking and kitchen operations across all service outlets, including restaurant, banqueting and room service.

Key responsibilities

• Prepare and cook ingredients according to standard recipes, ensuring correct temperature, portion sizes and presentation.
• Execute mise‑en‑place tasks: wash, peel, chop, portion and label vegetables, meats, seafood and other items before service.
• Maintain food quality and consistency by inspecting freshness, controlling waste and following hotel presentation standards.
• Assist with buffet set‑up, replenishment and special event catering, supporting senior chefs during service.
• Keep workstations, equipment and storage areas clean and sanitized, and ensure all kitchen tools are operational.

Additional responsibilities by level

• Commis III (entry): perform basic preparation tasks, learn recipes and support senior chefs.
• Commis II (intermediate): operate assigned stations, prepare complete menu items with minimal supervision and assist with plating.
• Commis I (senior): independently prepare menu items, supervise junior team members and support the Chef de Partie with planning.
