Sous Chef

About the role

The Westin Cape Town is recruiting a fun, energetic, innovative and enthusiastic Sous Chef with a positive attitude. Reporting to the Executive Sous Chef, the successful candidate assists in managing the kitchen operation, upholds service standards and quality in a pressurised environment and follows the Westin Cape Town culture in line with Marriott International policies and procedures.

Key responsibilities

• Ensure compliance with health and safety, COVID and food hygiene practices and protocols
• Supervise all kitchen stations and ensure quality standards are met and maintained
• Motivate and work closely with chefs of all levels
• Help determine food inventory needs, stocking and ordering
• Uplift the quality, presentation and food offered through supervision, on-the-job training, organisation and planning
• Assist with bi-monthly stock takes and open/close counts
• Complete daily duties and perform other duties as required

Required profile

• Recognised culinary diploma or at least 3 years' experience in a similar operation; 3-5 years' experience in a similar position
• Experience executing high-quality cooking techniques and good food knowledge
• Leadership, mentorship and staff management skills
• Understanding of local and international food trends
• Knowledge of the Occupational Health and Safety Act and HACCP, exposure to health, safety and hygiene audits, and experience with disciplinary procedures
• Ability to work under pressure, meet deadlines, and work rostered shifts, weekends and public holidays

• Competence in MS Office (Word, Excel, email)
• Sound administrative skills
• Strong interpersonal and communication skills, ability to engage guests and handle conflict
