Mixologist

About the role

A Pullman hotel in Cape Town is looking for a Mixologist to elevate the beverage experience across all its food and beverage outlets. The role creates innovative, profitable and memorable drinks while delivering exceptional guest service and upholding Pullman and Accor luxury standards. It covers all bars, restaurants, lounges, banquet facilities, in-room dining, executive lounges, pool outlets and special events.

Key responsibilities

• Create signature cocktails reflecting the Pullman brand and local South African influences, and design seasonal menus, promotions and cocktail experiences
• Prepare and serve alcoholic and non-alcoholic drinks to brand standards, and recommend wines, spirits and food pairings
• Support beverage operations across the main hotel bar, restaurant bars, specialty restaurants, rooftop bar, executive lounge, conference and banquet facilities, room service and VIP functions
• Develop beverage concepts with the F&B leadership, run menu engineering and profitability reviews, and create drink pairings for restaurant menus
• Control beverage costs, conduct stock counts, monitor usage and minimise wastage, and support procurement and supplier relationships
• Train bartenders and colleagues on cocktail preparation, product knowledge and responsible alcohol service, and write beverage manuals and standard recipes
• Ensure compliance with liquor legislation, food safety and hygiene rules, and keep the bar clean and safe
• Drive cocktail and premium spirit sales, improve gross profit and maximise upselling

Required profile

• Diploma or certificate in hospitality, food and beverage management or mixology preferred; WSET, BarSmarts, Court of Master Sommeliers or equivalent certifications advantageous
• Minimum 3-5 years' experience in luxury hotels, upscale restaurants or premium cocktail bars; multi-outlet hotel experience preferred
• Previous banqueting and event beverage experience is an advantage
