Food & Beverage Cost Controller

About the role

The Food & Beverage Cost Controller ensures the financial integrity and profitability of all food and beverage operations at Mont Rochelle. You will monitor stock movements, validate purchasing processes, analyse costs, and provide accurate reporting to support business decisions.

Key responsibilities

• Verify all deliveries against approved purchase orders and perform three‑way matching of PO, delivery note, and supplier invoice.
• Record shortages, damaged stock, and discrepancies promptly; investigate pricing or quantity variances before payment.
• Capture verified supplier invoices to the correct outlet and cost centre, and process goods returned notes.
• Conduct scheduled stock counts across all F&B outlets, bars, cellars and storage areas; reconcile stock movements and investigate variances.
• Monitor inter‑departmental stock transfers and maintain accurate returns registers.
• Escalate outstanding supplier credits to the Financial Manager for resolution.

Required profile

• Strong attention to detail and ability to work accurately with financial data.
• Understanding of procurement, inventory control and cost analysis within a hospitality environment.
• Ability to investigate and resolve discrepancies and variances.
• Commitment to compliance with company policies and procedures.
