About the role
The Sushi Assistant supports the daily production of sushi within the restaurant’s kitchen. Working closely with the chef, the role ensures that sushi recipes are prepared accurately, waste is minimised and food‑safety standards are consistently met.
Key responsibilities
- Follow the production plan to meet sales targets while reducing waste.
- Prepare sushi recipes according to specifications and maintain a clean work environment.
- Coordinate with the chef to ready upcoming promotional lines.
- Assist with monthly stock takes and perform daily waste scanning.
- Adhere to food‑safety procedures, maintain hygiene standards, keep the cold chain intact and prevent cross‑contamination.
- Model company values, stay updated on legislation, and take ownership of tasks.
Required profile
- Grade 12 / Matric qualification.
- Experience in cutting and filleting fish and preparing fish‑related products.
- Broad knowledge of fish and various sushi recipes.
- Ability to communicate effectively in English.
- Understanding of ingredient specifications, production cards, SOPs and relevant systems.
- Food‑safety compliance and training experience.
- Business‑minded and customer‑oriented attitude.
